Getting Your Child To Eat Vegetables: A Green Smoothie

It was the advice that only a best friend could give.  I was desperate.  My 2 year-old hadn't so much as touched a vegetable in weeks and was starting to turn her nose up at fruits too.

"My kids are not much better," my friend said. "But most mornings I can get them to drink a Green Smoothie."

I then spent the next 20 minutes asking question after question about these magical Green Smoothies.  With each answer she gave my heart filled with hope.  My friend blended 3 ingredients for her smoothies; ice, bananas and fresh spinach leaves.  I was worried that my kids would taste the spinach and refuse the smoothie, but she assured me that the banana would cover the taste of the spinach.

It was only a matter of hours before I handed a small plastic cup full of Green Smoothie to my 2 year old.  She was excited about the novelty of using a straw and I held my breath in anticipation.  She drank at least a tablespoon full in that first slurp and my heart almost burst with joy!  I may have shed a tear, but that's not important.  She kept drinking until it was almost gone and I couldn't have been more proud.

It has been over 2 years now and hundreds of smoothies later.  I find it ironic that my once 2 year old and still my pickiest eater loves smoothies more than any of her siblings.  Our smoothie has changed a bit over the years with the addition of yogurt and frozen berries. 

If you are one of the many parents who house a small picky eater, try out this recipe and don't forget the straw.

1/2 cup of frozen berries (strawberries, blueberries, raspberries, etc.)
1/2 cup of orange juice
1/2 cup of yogurt
1 banana
3- 5 handfuls of fresh baby spinach leaves (what ever you have room for!)

Serve cold and enjoy.
